Weekend Fun
Over the weekend we went up to Charlotte to celebrate Dana's birthday. We all went to Kristopher's for lunch and then went back to Mom's for presents, cake and ice cream. Dana requested cheesecake and it was yummy! We gave her mommy and me aprons that I ordered off Etsy and they were quite adorable...if I do say so myself! We went up to Dana & Domingo's that evening because we were watching Fifi the next day. Mingo grilled chicken kabobs and it's now Seth's new obsession. He loved them! The next day was super rainy and the kiddos were tired from the day before, but we still had fun. Home again, home again, jiggity jig.

Emily's Baby Shower
Last week, Seth and I went to Emily's baby shower. Poor Em was on bed rest due to high blood pressure, but it was still nice to see her and celebrate the pending arrival of Baby B. Seth had a great time playing with the girls and feeding the chickens. We had 250 diapers delivered for her gift. You can never get too many diapers! Emily ended up going into the hospital the next day and the baby was born on Tuesday. Surprise! It's a boy! We cannot wait to meet little Fuller!

An Apple for Teacher
Seth and I made 15 caramel/M&M/Chocolate covered apples for his teachers and support staff for the last day of school. He loved helping with this and I'm surprised he didn't end up with an upset stomach, because he kept getting into the ingredients. This is what we did:
1) Unwrap 2.5 packages of caramels and put in a pyrex bowl.
2) Insert cookie pop sticks into apples.
3) Melt caramel, stirring every 45 seconds, until thin and liquid. (About 3 min)
4) Cover apples in caramel.
5) Roll in mini M&Ms.
6) Allow to set on a pan covered with greased parchment paper.
7) Melt 1/2 package chocolate almond bark in double boiler. Add a little Crisco to thin.
8) Drizzle chocolate over apples.
9) Allow to set again.
10) Wipe down sticks with a damp cloth, because your kid got chocolate all over the sticks.
11) Place in treat bags. Keep one aside to sample. (You have to make sure they are good. Right?)
12) Close and attach homemade tags with sparkly pipe cleaners and curl around a pencil.
Seth loved handing these out at school and the teachers all seemed very impressed. They may not have been the most beautiful thing ever, but they had character and they were truly made with love by Seth.

Nebraska
This week I traveled to Nebraska to attend the funeral of my drear friend T.J.'s dad. T.J. had called me the week before and told me that his dad had taken a turn for the worse, but we had no idea he's be gone that fast. As soon as I got the call that he had passed, I knew I'd be hopping on a plane. T.J. is one of those rare people that I know I can count on no matter what, a true friend, and I was glad I could be there for him during this time. From the first time I met Mr. & Mrs. Becker they have treated me like family. Mr. Becker was a wonderful man - charming , funny and kind - and I'm glad to have known him. He will be missed by many.
